Vegetables Preserved by Vinegar Consumption by Country

China had the largest reported food supply of vegetables preserved by vinegar or acetic acid in 2023, at 369,278 tonnes, representing 16.4 percent of the listed total. India ranked second at 259,713 tonnes, followed by the United States at 246,782 tonnes. On a per-person basis, the United Arab Emirates led at 15.24 grams per person per day, ahead of Armenia at 14.90 grams. From 2019 to 2023, the listed total increased by 9.4 percent, while Russia recorded the largest decline among countries with data in both years. These figures measure food available for human consumption, not actual intake.

China Leads Total Supply

China led at 369,278 tonnes, 1.42 times India. The United States sat third at 246,782 tonnes, ahead of Vietnam at 98,703 and the United Kingdom at 95,883. The top three held 39.0 percent of the 2,247,199-tonne total, and the top five 47.6 percent. Canada, Taiwan, Thailand, the United Arab Emirates and the Philippines closed the top ten between 56,122 and 89,174 tonnes. Of all 176 countries in the file, 175 carried a 2023 value.

Netherlands Records Largest Annual Decline

Across the 175 countries with reported values in both 2022 and 2023, the combined total declined by 1.3 percent, from 2,277,906 tonnes, a loss of 30,707. The Netherlands fell by 93,875 tonnes, down 88.2 percent from 106,439, the largest decline in the file. India added 29,018 tonnes, up 12.6 percent. Vietnam added 28,632 tonnes, up 40.9 percent. China added 21,848 tonnes. Germany declined by 15,491 tonnes, down 39.7 percent. Saudi Arabia fell by 12,989 tonnes, down 29.4 percent. The United States declined by 15,134 tonnes, while Belarus added 13,266 tonnes from 972.

Russia Has the Largest Five-Year Decline

Among the 174 countries with reported values in both 2019 and 2023, supply grew 9.4 percent, from 2,053,410 tonnes, a gain of 193,789. Russia declined by 76,851 tonnes, down 72.9 percent from 105,376, the largest decline in the file. India added 62,072 tonnes, up 31.4 percent. Egypt added 45,865 tonnes from 818. The United States added 37,789 tonnes, up 18.1 percent. Vietnam added 27,152 tonnes. Cuba reported 24,666 tonnes in 2019 with no later values, while Tuvalu first reported a zero in 2023.

Canada and Vietnam Rank in the Top Ten

Canada ranked sixth at 89,174 tonnes. Taiwan, seventh at 77,157 tonnes, ranked eighth per person at 9.07 grams. Thailand, eighth at 66,553 tonnes, sits outside the per-person top ten. The United Arab Emirates, ninth at 59,188 tonnes, leads per person. The Philippines closed the top ten at 56,122 tonnes. Vietnam ranked fourth at 98,703 tonnes, adding 28,632 in the latest year and 27,152 over five years. The United Kingdom, fifth at 95,883 tonnes, added 25,514 over five years, up 36.3 percent. The United States, third at 246,782 tonnes, declined by 15,134 lately but added 37,789 over five years.

UAE Leads Per-Person Supply

The United Arab Emirates ranked first per person at 15.24 grams per day, ahead of Armenia at 14.90 and Moldova at 11.92. Montenegro followed at 10.64 grams and Denmark at 10.34. Latvia sat at 10.01 grams. China, the volume leader, reported 0.71 grams per person. Total tonnage and per-person figures describe different measures: the first reflects overall volume, the second adjusts for population.

For vegetables preserved by vinegar, tonnage follows element 5141 and daily grams follow element 665 across 2019 to 2023. A change is measured from the earlier year; none is stated from a zero base. Only countries present in both compared years enter a change. A reported zero is not a blank, and blanks never stand in for zeros. The combined total declined by 1.3 percent from 2022 to 2023 but increased by 9.4 percent from 2019 to 2023. The file holds 176 countries after removing World, regional and aggregate rows; 175 carry 2023 values. The numbers describe food available for human consumption.
