Liver Preparations Consumption by Country

Germany narrowly led liver preparations in 2023 with 5,830 tonnes, just ahead of the United Kingdom at 5,740. The Netherlands followed at 3,997 tonnes, while Iceland led per person at 3.26 grams a day. The 2023 figures total 44,880 tonnes across 146 countries, 137 with values, covering food available for human consumption from FAO Supply Utilization Accounts for 2019-2023.

Germany accounted for 13.0 percent of the 2023 listed total, giving it a clear lead over the United Kingdom.

In 2023, Germany had the largest listed supply of liver preparations at 5,830 tonnes, narrowly ahead of the United Kingdom at 5,740 tonnes. Iceland ranked first on a per-person basis at 3.26 grams per person per day. Across 137 countries with a reported 2023 value, the listed total was 44,880 tonnes. These figures represent food available for human consumption, not the amount actually eaten.

Croatia placed fourth at 3,193 tonnes, with Poland fifth at 2,839 and Serbia sixth at 2,813. The Czech Republic, France, Belarus and Spain closed the top ten between 1,609 and 2,550 tonnes. The top three held 34.7 percent of the annual listed consumption total, and the top five 48.1 percent. Germany had the highest listed food supply at 5,830 tonnes, while Iceland had the highest per-capita food supply at 3.26 grams per person.

• Dutch liver slides: down 1,258 tonnes, or 23.9 percent, slipping to third.
• British liver eases: down 695 tonnes, or 10.8 percent, slipping to second.
• French liver grows: up 527 tonnes, or 32.5 percent, climbing to eighth.
• Spanish liver climbs: up 477 tonnes, or 42.1 percent, entering the top ten.

Germany Retakes Liver Preparations by a Nose

Germany retook first place while the Netherlands lost 1,258 tonnes, down 23.9 percent to 3,997 tonnes. The United Kingdom lost 695 tonnes, down 10.8 percent. Moldova shed 598 tonnes, down 41.9 percent. Ukraine gave up 356 tonnes, down 44.1 percent. France added 527 tonnes, up 32.5 percent. Spain added 477 tonnes, up 42.1 percent. Poland added 310 tonnes, up 12.3 percent. Czechia added 270 tonnes, up 11.8 percent. The 133 countries present in both years eased from 46,121 tonnes to 44,880 tonnes, down 1,241 tonnes, or 2.7 percent, with four arrivals carrying nothing.

Britain Leads the Five-Year Decline

Between 2019 and 2023, the 118 countries present in both years slipped from 47,863 tonnes to 44,854 tonnes, down 3,009 tonnes, or 6.3 percent. The United Kingdom lost 3,088 tonnes, down 35.0 percent. Guatemala fell 2,473 tonnes, down 99.9 percent to 3 tonnes. Germany lost 1,665 tonnes, down 22.2 percent. Ireland shed 1,570 tonnes, down 60.7 percent. The Netherlands gave up 1,443 tonnes, down 26.5 percent. France added 2,048 tonnes, rising from 99 tonnes to 2,147. Poland added 1,907 tonnes, rising from 932 tonnes to 2,839. Czechia added 1,670 tonnes from 880. Seven countries left with 84 tonnes, against 19 arrivals with 26.

Iceland Tops Liver Preparations per Person

Iceland's 3.26 grams a day beat Croatia's 2.25 in second and Serbia's 1.14 in third. Montenegro sat fourth at 1.11 grams, with French Polynesia at 0.97 and Moldova at 0.88. Seychelles, the Czech Republic, Denmark and the Netherlands followed below 0.9 grams. Germany, first by volume, missed the per-person top ten. North Atlantic islands top the daily table.

What the Liver Preparations Data Covers

Liver preparations for human consumption are recorded in tonnes and daily grams per person for each reporting country over 2019-2023. Annual totals sum reporting countries only. Ninety tonnes separate the top two on a 44,880-tonne table. The per-person crown sits on an island; the tonnage crown sits in Berlin.

Guatemala's 99.9 percent five-year fall ends at 3 tonnes, not zero, so it reads as retreat without a warning. France's 2,061.0 percent five-year rate divides by 99 tonnes and means a new line. Poland's 204.8 percent rate divides by 931 tonnes the same way. No reported zero followed a large value.

FAO Supply Utilization Accounts log tonnage for human consumption as element 5141 and daily grams per person as element 665, shown for liver preparations across 2019-2023. Percentages hinge on the earlier year, and zero bases earn no percentage. The universe numbers 146 countries after aggregates are taken away, 137 with 2023 values. Only countries with values at both endpoints enter comparisons. The 2023 listed total is the sum of the 137 countries with a 2023 value.
