What's the difference between field corn and sweet corn?

They're completely different! Field corn (dent corn) is what farmers grow in vast fields—it's starchy, not sweet, and inedible fresh. It's harvested mature and dry, then processed into animal feed, corn syrup, cornmeal, ethanol, and industrial products. Field corn represents 99% of US corn production. Sweet corn is a genetic mutation with higher sugar content, harvested immature (milky stage) for fresh eating—that's what you grill or boil. It's planted, grown, and harvested completely differently. You can't eat field corn off the cob—it's hard and tasteless. Conversely, sweet corn left to mature doesn't become field corn—it just gets tough and starchy. They're bred for different purposes: field corn for starch and processing, sweet corn for fresh consumption. So those endless cornfields you see? Not for eating fresh—they're feeding animals and cars!
