The figures below reproduce FAO Crops and Livestock Products records for item Buttermilk; dry, 2019-2023, reporting production quantity in tonnes. The table lists 163 countries; 154 reported a 2023 quantity, and the 2023 annual listed total is 655,399 tonnes. The 2023 country list runs from the largest listed quantity to the smallest.

Russia and the United States run nearly level: 66,975 tonnes against 64,368, a gap of 2,607 tonnes. The pair holds 20.0 percent of the listed total, with third and fourth at 40,281 and 34,620 tonnes respectively.

Buttermilk; Dry Production by Country in 2023

Russia was the largest dry buttermilk producer in the 2023 listed data with 66,975 tonnes, followed by the United States with 64,368 tonnes and Canada with 40,281 tonnes. New Zealand ranked fourth with 34,620 tonnes.

Russia holds 10.2 percent of the listed 2023 total. The top three together hold 26.2 percent of the 655,399-tonne listed total.

Belarus Adds 11,888 Tonnes as Buttermilk; Dry Production Grows 3.2 Percent Among Common Reporters

From 2022 to 2023 the common reporter universe (152 countries with data in both years) moved from 634,880 tonnes to 655,387 tonnes, a change of 20,507 tonnes (3.2 percent). The totals listed for each year were 636,056 tonnes (155 reporters) and 655,399 tonnes (154 reporters); 3 countries reporting in 2022 (largest: Kyrgyzstan, 921.42 tonnes) did not report in 2023, while 2 new reporters joined (Cameroon, 6.59 tonnes, and Estonia, 4.91 tonnes). Belarus added 11,888 tonnes (up 69.0 percent) and Iran 8,931 tonnes (up 56.2 percent), while Iraq added 3,502 tonnes (up 77.6 percent).

United States Adds 10,727 Tonnes as Buttermilk; Dry Production Grows 3.8 Percent Among Common Reporters Since 2019

Between 2019 and 2023, the common reporter universe (152 countries with data in both years) rose from 631,474 tonnes to 655,394 tonnes, a change of 23,920 tonnes (3.8 percent). The totals listed for each year were 633,227 tonnes (160 reporters) and 655,399 tonnes (154 reporters); 8 reporters present in 2019 (largest: Uganda, 453.91 tonnes) are absent in 2023, while 2 new reporters joined (Guyana, 4.41 tonnes, and Saint Kitts and Nevis, 0.07 tonnes). The United States added 10,727 tonnes (up 20.0 percent) and Iran 10,168 tonnes (up 69.3 percent), while the Netherlands added 8,403 tonnes (up 58.4 percent).

The 2023 dry buttermilk production ranking and shares use 2023 listed quantities. In the dry buttermilk production data, zero means a reported nil or negligible flow; an empty cell means no quantity was reported. For dry buttermilk production changes, only countries with quantities in both endpoint years enter the arithmetic. Production quantities are reported to FAO by national statistical sources.
