The table lists 167 countries; 161 reported a 2023 quantity, and the 2023 annual listed total is 5,369,329 tonnes. The 2023 country list runs from the largest listed quantity to the smallest.

The United States produced 1.96 times as much as India: 1,230,368 tonnes against 629,155, while New Zealand ranks third with 424,620 tonnes, 204,535 tonnes behind India. The top two hold 34.6 percent of the listed total, with third and fourth at 424,620 and 369,400 tonnes respectively.

The United States was the largest dry skim milk and buttermilk producer in the 2023 listed data with 1,230,368 tonnes, followed by India with 629,155 tonnes and New Zealand with 424,620 tonnes. Germany ranked fourth with 369,400 tonnes.

The United States holds 22.9 percent of the listed 2023 total. The top three together hold 42.5 percent of the 5,369,329-tonne listed total.

India Adds 77,675 Tonnes as Skim Milk & Buttermilk; Dry Production Eases 0.4 Percent

The common reporter universe (160 countries with data in both years) slipped from 5,392,009 tonnes to 5,369,322 tonnes between 2022 and 2023, a change of -22,687 tonnes (-0.4 percent). The totals listed for each year were 5,392,012 tonnes (161 reporters) and 5,369,329 tonnes (161 reporters); 1 country reporting in 2022 (2.68 tonnes, Burundi) did not report in 2023, while 1 new reporter added 6.59 tonnes (Cameroon). India added 77,675 tonnes (up 14.1 percent), while the United States fell 27,330 tonnes (down 2.2 percent) and Argentina 19,419 tonnes (down 35.0 percent).

From 2019 to 2023 the common reporter universe (159 countries with data in both years) moved from 4,951,831 tonnes to 5,369,325 tonnes, a change of 417,494 tonnes (8.4 percent). The totals listed for each year were 4,952,875 tonnes (165 reporters) and 5,369,329 tonnes (161 reporters); 6 reporters present in 2019 (largest: Yemen, 385.29 tonnes) are absent in 2023, while 2 new reporters joined (Guyana, 4.41 tonnes, and Saint Kitts and Nevis, 0.07 tonnes). India added 331,503 tonnes (up 111.4 percent), more than doubling from 297,652 tonnes, while Uzbekistan added 87,813 tonnes (up 459.6 percent).
