Germany had the largest listed food supply of buttermilk, curdled and acidified milk: 959,000 tonnes in 2023, 1.02 times Poland's 941,092. Italy followed at 284,952 tonnes, while Denmark led per person at 68.28 grams a day. The 2023 figures total 2,654,333 tonnes across 73 countries, all with values, covering food available for human consumption from FAO Supply Utilization Accounts for 2019-2023.
Germany recorded 959,000 tonnes of buttermilk, curdled and acidified milk food supply in 2023, the highest national figure at 36.1 percent of the listed total. Denmark is the per-person leader. Poland recorded the largest latest-year increase, adding 62,975 tonnes (7.2 percent).
Key answer: In 2023, Germany had the largest listed food supply of buttermilk, curdled and acidified milk at 959,000 tonnes, followed closely by Poland at 941,092 tonnes. Denmark ranked first per person at 68.28 grams per person per day. The 2023 listed total was 2,654,333 tonnes across 73 countries. These figures represent food available for human consumption, not the amount actually consumed.
Denmark placed fourth at 148,247 tonnes, with Sweden fifth at 65,011 and Finland sixth at 38,563. The Philippines, Australia, Romania and Switzerland closed the top ten between 16,422 and 37,787 tonnes. The top three held 82.3 percent of the annual listed consumption total, and the top five 90.4 percent. Germany had the highest listed food supply at 959,000 tonnes, while Denmark had the highest per-capita food supply at 68.28 grams per person. Poland added 62,975 tonnes between 2022 and 2023, up 7.2 percent to 941,092 tonnes. Germany added 55,520 tonnes, up 6.1 percent. Romania added 32,187 tonnes from a zero base. Uganda added 5,130 tonnes from 304. Saudi Arabia added 2,640 tonnes, up 108.5 percent. Australia lost 32,478 tonnes, down 49.3 percent. Denmark shed 17,709 tonnes, down 10.7 percent. The Philippines gave up 17,455 tonnes, down 31.6 percent. The 73 countries present in both years rose from 2,555,643 tonnes to 2,654,333 tonnes, up 98,690 tonnes, or 3.9 percent, with no entries or exits. Between 2019 and 2023, the 70 countries present in both years advanced from 2,287,119 tonnes to 2,654,332 tonnes, up 367,213 tonnes, or 16.1 percent. Poland added 291,092 tonnes, up 44.8 percent, accounting for 79.3 percent of the net gain. Germany added 145,900 tonnes, up 17.9 percent. Finland added 29,958 tonnes, up 348.1 percent. Italy added 24,952 tonnes, up 9.6 percent. Australia lost 50,772 tonnes, down 60.3 percent. Romania shed 37,813 tonnes, down 54.0 percent from 70,000. Serbia gave up 25,072 tonnes, down 84.2 percent. The Philippines fell 12,116 tonnes, down 24.3 percent. No country left, against three arrivals with a single tonne. Denmark's 68.28 grams a day edged Poland's 66.52, with Germany third at 31.08 and Finland at 18.86. Sweden sat fifth at 16.88 grams, with Italy at 13.12 and Moldova at 12.51. Bhutan, Switzerland and Romania followed below 12.6 grams. Germany pairs first-place tonnage with third-place daily intensity. The Nordic-Baltic top drinks deepest. Buttermilk, curdled and acidified milk for human consumption are recorded in tonnes and daily grams per person for each reporting country over 2019-2023. Annual totals sum reporting countries only. Seventeen thousand tonnes separate the top two on a 2.65-million-tonne table. The per-person crown sits in Copenhagen; the tonnage crown sits in Berlin. Romania returned from zero in the latest year. It lost 54.0 percent across five years from 70,000 tonnes. Uganda's 1,688.0 percent latest rate divides by 304 tonnes. Serbia's 84.2 percent five-year fall ends far above zero. No country with a large earlier value was followed by a reported zero in 2023. FAO Supply Utilization Accounts record tonnage for human consumption as element 5141 and daily grams per person as element 665, shown for buttermilk, curdled and acidified milk across 2019-2023. Percentages rest on the earlier year, and zero bases rest on none. The universe counts 73 countries after aggregates are removed, all with 2023 values. Only countries holding values at both endpoints enter comparisons. The 2023 listed total of 2,654,333 tonnes is the sum of every country with a 2023 value. A reported zero is kept, a blank is missing, and under-1,000 values keep two decimals.

Methodology
Frequently Asked Questions
Who trails Denmark per person?
Denmark clearly led buttermilk per person in 2023, far above second-placed Poland at 66.52 grams with Germany next best at 31.08 grams a day overall.
How close were Germany and Poland in 2023?
Very close: Germany held 36.1 percent of the annual listed total, only 1.02 times second-placed Poland, a gap of 17,908 tonnes.
How much did Poland add lately?
Poland alone added 62,975 tonnes, up by 7.2 percent in the latest year to 941,092 tonnes, closing in on first place outright overall in the file.
Is this what people actually drank?
No. The figures measure food available for human consumption in the reference year, not actual intake, so real drinking sits below supply in every case.
Which countries drove the five-year increase?
Poland added 291,092 tonnes and Germany added 145,900 tonnes, the two engines of the net five-year gain.
