Cucumbers and Gherkins Consumption by Country

China had the largest cucumber and gherkin food supply in 2023, with 73,296,817 tonnes, equal to 82.9 percent of the listed total. The United States ranked second with 1,684,673 tonnes, followed by Russia with 1,676,459 tonnes. China also had the highest reported food supply per person, at 141.16 grams per person per day. All figures describe food available for human consumption, not actual intake.

China Accounts for Most of the Total

China led at 73,296,817 tonnes, 43.51 times the United States. Russia ranked third at 1,676,459 tonnes, just 8,214 behind the United States, ahead of Türkiye at 1,464,888. The top three held 86.7 percent of the 88,367,276-tonne total, and the top five 89.4 percent. Uzbekistan, Ukraine, Germany, Kazakhstan and Poland closed the top ten between 442,609 and 901,796 tonnes. Of 170 countries in the file, 167 carried a 2023 value.

China Drives the Latest-Year Gain

Across the 167 countries in both 2022 and 2023, supply grew 3.2 percent, from 85,628,900 tonnes, a gain of 2,738,376. China added 2,390,723 tonnes, up 3.4 percent and accounting for most of the net increase. Iran added 104,657 tonnes, up 40.1 percent. The United States added 86,671 tonnes. Iraq shed 65,658 tonnes, down 22.6 percent. Germany added 59,696 tonnes, while Uzbekistan added 53,193 and Türkiye shed 50,937. Russia added 46,209 tonnes.

China Drives Growth Over Five Years

Among the 164 countries in both 2019 and 2023, supply grew 11.7 percent, from 79,077,154 tonnes, a gain of 9,288,289. China added 9,011,392 tonnes, up 14.0 percent, nearly all of the net rise. Ukraine shed 149,034 tonnes, down 14.8 percent. Saudi Arabia added 136,052 tonnes, nearly tripling from 71,356. Türkiye shed 115,200 tonnes. Uzbekistan added 98,253 tonnes. The United States added 76,168 tonnes, up 4.7 percent. Three countries left over the period, against three arrivals.

Türkiye Ranks Fourth by Volume

Türkiye ranked fourth at 1,464,888 tonnes, shedding 50,937 in the latest year and 115,200 from 1,580,088 over five. Uzbekistan, fifth at 901,796 tonnes, added 53,193 lately and 98,253 over five. Ukraine, sixth at 858,796 tonnes, shed 149,034 over five years, down 14.8 percent. Germany, seventh at 703,328 tonnes, added 59,696 in the latest year.

Russia Remains Third by Volume

Russia ranked third at 1,676,459 tonnes, adding 46,209 in the latest year, just 8,214 behind the United States. Per person, Russia sat far down the table. Kazakhstan, eighth at 554,974 tonnes, sits in the per-person top ten. Poland, ninth at 442,609 tonnes, sits outside the per-person top ten. Indonesia closed the top ten at 411,178 tonnes.

China Also Leads Per Person

China's 141.16 grams a day topped the per-person table, ahead of Albania at 84.60 and Kazakhstan at 74.79. Uzbekistan followed at 69.30 grams and Tajikistan at 64.28. Ukraine ranked sixth at 62.36 grams, followed by Vanuatu at 61.15 and Belarus at 60.58. Azerbaijan ranked ninth at 57.71 grams, ahead of Kyrgyzstan at 52.30.
