Edible Offals and Liver of Ducks, Fresh, Chilled or Frozen Consumption by Country
France recorded the largest reported food supply of fresh, chilled or frozen duck offals and liver in 2023, at 705.17 tonnes, narrowly ahead of Germany at 701.64 tonnes. Slovakia ranked third with 553.88 tonnes. On a population-adjusted basis, French Polynesia led at 0.30 grams a day, followed by Slovakia at 0.28 grams and New Caledonia at 0.25 grams. The listed 2023 total was 3,886 tonnes, and 70 of the 88 country rows reported a value for that year, 55 of them above zero. These figures describe food available for human consumption, not the amount people actually ate.
The Netherlands placed fourth by volume at 509.04 tonnes, and the three leading countries together accounted for about 50.5 percent of the listed 2023 total. France lost 457.83 tonnes between 2022 and 2023, down 39.4 percent to 705.17 tonnes. Spain lost 145.80 tonnes, down 53.5 percent, to 126.64 tonnes, and Austria shed 64.12 tonnes, down 29.0 percent. The Czech Republic added 114.49 tonnes, up 206.9 percent, Germany added 258.50 tonnes, up 58.3 percent, and the Netherlands added 216.46 tonnes, up 74.0 percent. The 66 countries with a value in both years rose from 3,748 tonnes to 3,833 tonnes, up 85 tonnes, or 2.3 percent, with Jamaica leaving while Congo, the Marshall Islands, Senegal and Tunisia entered. Between 2019 and 2023, the 57 countries with a value in both years rose from 3,683 tonnes to 3,825 tonnes, up 142 tonnes, or 3.8 percent. Germany moved from a reported zero in 2019 to 701.64 tonnes in 2023, and the Netherlands from zero to 509.04 tonnes, so no percentage is calculated for either country. The Czech Republic added 105.93 tonnes, up 165.8 percent. Spain recorded the largest decline, losing 718.68 tonnes, down 85.0 percent, while Austria shed 168.80 tonnes, down 51.9 percent, and Vietnam gave up 159.78 tonnes, down 76.0 percent. Thirteen countries entered the comparison with 2023 values and no 2019 value, while twelve left it. French Polynesia recorded 0.30 grams a day in 2023, ahead of Slovakia at 0.28 grams in second and New Caledonia at 0.25 grams in third. Belgium and Luxembourg followed at 0.11 grams. Edible offals and liver of ducks, fresh, chilled or frozen, available for human consumption are recorded in tonnes and in grams per person per day for each reporting country over 2019-2023. Annual totals sum reporting countries only, and the listed total is not a world figure that includes regional aggregates. Total tonnage shows the scale of reported food supply, while grams per person per day adjust the figures for population size. Fifteen countries reported zero tonnes in 2023, including Poland, which last reported a positive value of 314.19 tonnes in 2021, and Nauru, which reported 9.87 tonnes in 2019. A reported zero is a recorded value and a blank cell is missing data, so the eighteen rows without a 2023 value cannot be read as zero supply. The data come from FAOSTAT Supply Utilization Accounts, using element 5141 for food supply quantity in tonnes and element 665 for food supply quantity in grams per capita per day, for edible offals and liver of ducks, fresh, chilled or frozen, over 2019-2023. Of the 88 country rows, 70 reported a value in 2023 and 55 of those were above zero. Comparisons between two years use only countries with values at both endpoints, which gives 66 countries for 2022-2023 and 57 for 2019-2023, and the country count and both totals come from that shared set. Percentage changes use the earlier year's value as the base and are not calculated when that base is zero. Reported zeros are kept as values, blank cells are treated as missing data, and values under 1,000 tonnes are shown to two decimal places.

Methodology
Frequently Asked Questions
Which country had the highest duck offal food supply in 2023?
France ranked first with 705.17 tonnes, followed by Germany with 701.64 tonnes and Slovakia with 553.88 tonnes in the 2023 figures reported that year overall.
Which country ranked first per person?
French Polynesia recorded the highest reported supply per person at 0.30 grams a day, ahead of Slovakia at 0.28 grams and New Caledonia at 0.25 grams.
Did the listed duck offal supply increase from 2022 to 2023?
Yes. Across the 66 countries reporting values in both years, the combined quantity rose from 3,748 to 3,833 tonnes, an increase of about 2.3 percent.
Does food supply mean actual consumption?
No. FAO food-supply figures measure food available for human consumption, and they do not establish how much was actually eaten by individuals in each country.
Why can a country show zero in the table?
A reported zero is different from a blank cell, which indicates missing data, and large changes to zero should be checked against the original source before being interpreted.
