China reported 21,294,299 tonnes of mushroom and truffle food supply in 2023, 93.1 percent of the listed total. The United States came second at 365,659 tonnes and the United Kingdom third at 145,053. Per person, China also led. China added 797,346 tonnes in the latest year, while Russia shed 63,794. All figures count food available for human consumption, not actual intake.

The top three held 95.3 percent of the 22,879,889-tonne total, and the top five 96.4 percent. Spain, Russia, Canada, Türkiye and Australia closed the top ten between 63,134 and 91,089 tonnes. Of 164 countries in the file, 161 carried a 2023 value.

China Adds Most, Russia Falls

Across the 160 countries in both 2022 and 2023, supply grew 3.4 percent, from 22,126,639 tonnes, a gain of 753,250. China added 797,346 tonnes, up 3.9 percent, exceeding the net rise alone. Russia shed 63,794 tonnes, down 42.6 percent. The United States shed 17,952 tonnes. Australia added 10,801 tonnes, up 20.6 percent. Germany added 9,177 tonnes, while France shed 8,626 and Cambodia added 5,987 from near zero overall. Türkiye added 5,614 tonnes overall. One country left the table, against one arrival.

China Adds Millions Over Five Years

Among the 155 countries in both 2019 and 2023, supply grew 19.3 percent, from 19,175,466 tonnes, a gain of 3,704,256. China added 3,685,278 tonnes, up 20.9 percent from 17,609,021, nearly all of the net rise. The United States shed 63,722 tonnes, down 14.8 percent. The United Kingdom shed 41,261 tonnes, down 22.1 percent. Hungary added 25,018 tonnes, up 109.4 percent from 22,867. Türkiye added 19,755 tonnes, up 44.8 percent. Two countries left over the period, against six arrivals overall.

Germany Holds Fourth

Germany sat fourth at 137,101 tonnes, adding 9,177 in the latest year. France, fifth at 118,606 tonnes, shed 8,626 lately. Spain, sixth at 91,089 tonnes, sits outside the per-person top ten. Russia, seventh at 86,077 tonnes, shed 63,794 in the latest year and added 18,724 from 67,353 over five.

Canada Holds Eighth

Canada sat eighth at 75,179 tonnes. Türkiye, ninth at 63,832 tonnes, added 5,614 lately and 19,755 from 44,077 over five. Australia, tenth at 63,134 tonnes, added 10,801 in the latest year and sits at 6.54 grams per person. The United Kingdom, third at 145,053 tonnes, shed 41,261 over five years.

China Leads Per Person Too

China's 41.01 grams a day topped the per-person table, ahead of Ireland at 15.95 and Hungary at 13.54. Macau followed at 8.03 grams and the Bahamas at 7.51. Belgium sat sixth at 6.59 grams and Australia seventh at 6.54, with Iceland eighth at 5.93. The United States, second by volume, sat at 2.92 grams per person.
