Rye Flour Consumption by Country

Poland's rye flour supply stood at 759,270 tonnes in 2023, first by volume at 23.2 percent of 3,276,915 tonnes and first per person at 53.66 grams a day. Behind that stable lead, both windows fell — 2.2 percent in the latest year, 8.3 percent over five — with Russia's 181,059-tonne five-year drop the deepest and Ukraine's 66,430-tonne single-year fall the sharpest. The United Kingdom spiked to 97,136 tonnes in 2022 before dropping back to 62,515.

Rye Flour Consumption

Poland's 759,270 tonnes beat Germany's 505,114 by 1.50 times; Russia holds third at 465,941 and the United States fourth at 251,688. The per-person order opens the same way: Poland at 53.66 grams a day, Latvia at 50.94 and Finland at 47.84.

Five Lines on a Falling Table

  • Poland's 2023 supply read 759,270 tonnes, the largest listed figure.
  • Germany came second at 505,114 tonnes, Russia third at 465,941.
  • Poland's 53.66 grams a day also topped the per-person list.
  • Russia's 181,059-tonne five-year fall was the deepest in the table.
  • The 82 reporters present in both 2019 and 2023 lost 295,319 tonnes, or 8.3 percent.

Stable Lead, Moving Field

Rye flour is reported by 100 reporters, though only 91 carry a 2023 figure — and Poland has topped both measures throughout. Germany and Russia together trail Poland, holding 52.8 percent of the total between the top three.

Ukraine's 66,430-tonne single-year fall and Russia's 60,656-tonne drop decided the latest window, while Poland, Belarus, Finland and the United States added back. Over five years Russia, Germany and Ukraine fell deepest as the United States, the United Kingdom and Sweden gained.

Poland First Twice at 23.2 Percent

Poland opens the 2023 table at 759,270 tonnes (23.2 percent of 3,276,915), Germany at 505,114 and Russia at 465,941. The United States and Türkiye come next at 251,688 and 162,299 tonnes.

The top three reporters hold 52.8 percent of the listed total, the top five 65.4 percent and the top ten 82.7 percent. Per person, Poland's 53.66 grams a day tops Latvia at 50.94 grams. Poland ranks first on both measures, with the largest total and the highest per-person figure.

Down 2.2 Percent in 2023 on Ukraine and Russia

Across the 89 reporters with values in both 2022 and 2023, listed supply moved from 3,352,029 tonnes to 3,276,610 tonnes, down 75,419 tonnes or 2.2 percent. The two years share the same 89 reporters; Mauritius and South Korea entered with a combined 305 tonnes and none left. Ukraine fell 66,430 tonnes (down 29.9 percent), Russia 60,656 (down 11.5 percent), the United Kingdom 34,621 (down 35.6 percent), Canada 31,002 (down 40.7 percent) and Germany 19,499 (down 3.7 percent).

On the gaining side, Poland added 57,913 tonnes (up 8.3 percent), Belarus added 38,705 tonnes (up 39.6 percent), Finland added 25,620 tonnes (up 35.5 percent), the United States added 12,356 tonnes (up 5.2 percent) and Türkiye added 12,267 tonnes (up 8.2 percent). The United Kingdom's fall from 97,136 to 62,515 tonnes reversed its 2022 spike from 30,504 tonnes in 2019.

Five Years Down 8.3 Percent Against US Gains

For the 82 reporters with values in both 2019 and 2023, listed supply fell from 3,571,803 tonnes to 3,276,483 tonnes, down 295,319 tonnes or 8.3 percent. The 2019 universe holds 90 reporters with values against 91 in 2023; eight reporters with a combined 129 tonnes left, while nine with a combined 431 tonnes entered. Russia fell 181,059 tonnes (down 28.0 percent), Germany 79,994 (down 13.7 percent), Ukraine 69,643 (down 30.9 percent) and Poland 56,540 (down 6.9 percent).

The United States added 59,368 tonnes (up 30.9 percent), the United Kingdom added 32,011 tonnes (up 104.9 percent) and Sweden added 26,192 tonnes (up 35.2 percent) against these falls, while Finland fell 17,942 tonnes (down 15.5 percent). Russia's fall from 647,000 to 465,941 tonnes is the largest absolute five-year decline, followed by Germany and Ukraine.

Poland has led per person every year since 2020. In 2019 Latvia was ahead, at 59.41 grams per day against Poland's 58.47, before dropping to 33.94 in 2020; it has since recovered to 50.94. Poland's own supply dipped from 815,810 tonnes in 2019 to 685,850 in 2021 and rose again to 759,270. Russia's decline came in one step, from 609,000 tonnes in 2020 to 465,582 in 2021, and it has stayed between 465,582 and 526,597 since. Ukraine peaked at 268,320 tonnes in 2021 and has fallen about 42 percent since. The FAO data do not explain these shifts.

What Counts as Rye Flour Supply?

Counted here is the FAO item Flour of rye rather than the wider rye category. Other rye products sit outside this figure.

The per-capita value expresses the reported food supply in population terms, showing how much was available per person per day. Poland records the highest value at 53.66 grams.

Rye Flour Consumption by Country: Quick Answer

Poland's 2023 rye flour total of 759,270 tonnes led Germany by 1.50 times across 91 reporters, with per-person leadership at 53.66 grams a day to match. Russia (465,941 tonnes) trailed in third. These figures measure food available for human consumption, not the amount actually eaten.

Methodology

The file counts 100 reporters holding a value in at least one year from 2019 through 2023; the tables print reporters only, without World, regional or China (aggregate) rows, and China here denotes the China reporter. For reporters present in both endpoint years, percentages take the earlier year as base. Zero-base years get no percentage, and tiny-base multiples should be read against the base.

Country totals come from FAO Supply Utilization Accounts element 5141 (food supply quantity, tonnes) and per-person values from element 665 (grams per capita per day), for flour of rye across 2019-2023 — availability for human consumption in the reference year, not intake. A zero is a reported zero; a blank means nothing was reported. The 3,276,915-tonne listed total sums the 91 reporters carrying a 2023 value, in tonnes as FAO published them. Frequently Asked Questions

How much rye flour does Poland report per person?

Poland reported 53.66 grams per person per day in 2023. Latvia follows at 50.94 grams and Finland at 47.84.

How did the United Kingdom double then fall back?

The series jumped in one step, from 29,061 tonnes in 2020 to 76,307 in 2021. It peaked at 97,136 tonnes in 2022 and fell to 62,515 in 2023, still about double the 2019 level. The dataset records the moves without explaining them.

What is rye flour used for?

Rye flour is milled from rye grain and is mainly used for bread, crispbread and other baked goods, especially in northern and eastern Europe.
